I haven’t played in ages, but I liked Tiny Epic Galaxies. I did find that the only difficulty setting that produced any challenge was the maximum “Epic” level, but that turned out to be an enjoyable challenge. You can also use the manual’s suggestion of giving the enemy a single re-roll of each unusable die, which would make all settings harder.
